Cleavers are characterized by their wide and thick blade, a slicing tip at the top, and the ability to make light work out of turning one thing into two. This modern butcher knife is designed with two thick sections of 440 stainless steel that are attached with a swivel ball bearing. This means the blade swings out and is secured in place by the clever locking liner in the handle. A quick push to one side releases the lock, allowing the behemoth blade and the 3.75-inch sharpened edge to fold down into the handle.
